Ingredients

  • 2 pounds carrots (peeled and cut into sticks)
  • 3 tbsp butter (melted)
  • 3 tbsp honey
  • 1/2 tsp salt (to taste)
  • 1/4 tsp black pepper (to taste)
  • 2 tbsp fresh parsley (chopped)
  • 1/4 cup Parmesan cheese (optional)


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel the carrots and slice them into uniform sticks for even cooking.
  3. Arrange the carrots in a single layer on a baking sheet.
  4. In a small bowl, melt the butter and stir in honey, salt, and pepper until smooth.
  5. Pour the honey butter mixture over the carrots, tossing them until coated evenly.
  6. Spread the carrots back out in a single layer.
  7. Roast the carrots for 20-25 minutes, stirring halfway through for even caramelization.
  8. Once tender and golden, remove from the oven and let them rest for 2 minutes.
  9. Transfer the carrots to a serving dish, drizzle any remaining glaze, and garnish with fresh parsley and Parmesan if desired.
  10. Serve immediately while still warm.

Notes

For added flavor, try using brown butter instead of regular butter. Adjust honey according to your sweetness preference.
