A sweet and savory side dish that transforms humble carrots with honey and butter.
Ingredients
- 2 pounds carrots (peeled and cut into sticks)
- 3 tbsp butter (melted)
- 3 tbsp honey
- 1/2 tsp salt (to taste)
- 1/4 tsp black pepper (to taste)
- 2 tbsp fresh parsley (chopped)
- 1/4 cup Parmesan cheese (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Peel the carrots and slice them into uniform sticks for even cooking.
- Arrange the carrots in a single layer on a baking sheet.
- In a small bowl, melt the butter and stir in honey, salt, and pepper until smooth.
- Pour the honey butter mixture over the carrots, tossing them until coated evenly.
- Spread the carrots back out in a single layer.
- Roast the carrots for 20-25 minutes, stirring halfway through for even caramelization.
- Once tender and golden, remove from the oven and let them rest for 2 minutes.
- Transfer the carrots to a serving dish, drizzle any remaining glaze, and garnish with fresh parsley and Parmesan if desired.
- Serve immediately while still warm.
Notes
For added flavor, try using brown butter instead of regular butter. Adjust honey according to your sweetness preference.
