A one-pan meal of juicy chicken thighs and fluffy rice soaked in sweet and smoky BBQ sauce, perfect for weeknight dinners.
Ingredients
- 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 1 cup long-grain white rice, rinsed and drained
- 2 cups chicken broth, preferably low-sodium
- ½ cup BBQ sauce (mesquite flavor recommended)
- ¼ cup honey
- 1 cup mixed vegetables (frozen or fresh peas, carrots, corn, bell peppers)
- 2 tablespoons vegetable or olive oil, divided
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper
- 2–3 green onions, thinly sliced (optional garnish)
- 2 tablespoons fresh parsley, chopped (optional garnish)
- Extra BBQ sauce for drizzling (optional)
Instructions
- Prep your ingredients: Cut chicken into bite-sized pieces. Combine garlic powder, onion powder, smoked paprika, salt, and pepper in a small bowl. Rinse rice until water runs clear, then drain.
- Sear the chicken: Heat 1 tablespoon oil in a skillet over medium-high heat. Season the chicken with half the seasoning mix and sear for 3–4 minutes per side until golden brown. Transfer to a plate.
- Toast the rice: Add remaining oil to the pan. Pour in the rinsed rice and the rest of the seasoning, stirring for 1–2 minutes until rice is slightly translucent.
- Build the sauce: Pour in the chicken broth, then add BBQ sauce and honey. Scrape up any browned bits and bring to a gentle boil, then reduce heat to low.
- Simmer the chicken and rice: Return chicken to the pan, cover, and simmer on low heat for 15 minutes without stirring.
- Add vegetables: Scatter mixed vegetables over the top, cover, and cook for another 5 minutes until rice is tender and chicken is cooked through.
- Rest and serve: Remove from heat, let sit covered for 5 minutes, fluff with a fork, garnish, and drizzle with extra BBQ sauce if desired.
Notes
For a leaner option, use chicken breasts but monitor cooking to prevent dryness. Customize with your favorite BBQ sauce and vegetables.
