These cozy and flavorful High Protein Chicken Enchiladas are packed with nutrients and perfect for weeknight dinners or festive family gatherings.
Ingredients
- 2 cups cooked shredded chicken
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 cup enchilada sauce
- 8 whole wheat tortillas
- 1 cup Greek yogurt
- 1 cup shredded cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Combine the cooked chicken, black beans, corn, and half of the enchilada sauce in a large bowl.
- Spread a thin layer of the remaining enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the chicken mixture, then roll them up tightly.
- Place the rolled tortillas seam-side down in the prepared baking dish.
- Top with the rest of the enchilada sauce, dollops of Greek yogurt, and the shredded cheese.
- Bake for about 20 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy the flavor!
