A beautifully baked heirloom tomato tart with a crispy, cheesy crust, perfect for any occasion.


Ingredients

  • 1 pre-made pie crust (store-bought or homemade)
  • 2 cups heirloom tomatoes, sliced
  • 1 cup grated parmesan cheese
  • 1/2 cup cream
  • 2 eggs
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the pie crust in a tart pan and blind bake for 10 minutes, until slightly golden.
  3. In a bowl, whisk together the cream, eggs, minced garlic, salt, and pepper until well combined.
  4. Arrange the sliced heirloom tomatoes evenly over the baked crust.
  5. Pour the cream mixture over the tomatoes, then sprinkle the grated parmesan on top.
  6. Bake for 30-35 minutes, or until the tart is set and the top is golden brown.
  7. Allow to cool for a few minutes before garnishing with fresh basil and serving.

Notes

This tart is best served slightly warm. Pair it with a mixed greens salad or a light soup. For storage, keep leftovers in an airtight container in the refrigerator for up to 3 days.
