A beautifully baked heirloom tomato tart with a crispy, cheesy crust, perfect for any occasion.
Ingredients
- 1 pre-made pie crust (store-bought or homemade)
- 2 cups heirloom tomatoes, sliced
- 1 cup grated parmesan cheese
- 1/2 cup cream
- 2 eggs
- 1 clove garlic, minced
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Place the pie crust in a tart pan and blind bake for 10 minutes, until slightly golden.
- In a bowl, whisk together the cream, eggs, minced garlic, salt, and pepper until well combined.
- Arrange the sliced heirloom tomatoes evenly over the baked crust.
- Pour the cream mixture over the tomatoes, then sprinkle the grated parmesan on top.
- Bake for 30-35 minutes, or until the tart is set and the top is golden brown.
- Allow to cool for a few minutes before garnishing with fresh basil and serving.
Notes
This tart is best served slightly warm. Pair it with a mixed greens salad or a light soup. For storage, keep leftovers in an airtight container in the refrigerator for up to 3 days.
