Ingredients

  • 4-5 Heirloom tomatoes, sliced
  • 2 cloves Fresh garlic, minced
  • 2 tablespoons Fresh thyme, chopped
  • 1 sheet Galette dough (store-bought or homemade)
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup Sharp cheddar cheese, grated
  • 2 tablespoons Fresh chives, chopped
  • 2 tablespoons Fresh basil, chopped


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the galette dough on a lightly floured baking sheet.
  3. Layer the sliced heirloom tomatoes over the dough, leaving a generous border.
  4. Sprinkle minced garlic, fresh thyme, and both cheeses evenly over the tomatoes.
  5. Gently fold the edges of the dough over the tomatoes, creating pleats as needed.
  6. Bake for 25-30 minutes, until the crust is golden brown and the tomatoes are bubbly.
  7. Remove from the oven and garnish with fresh chives and basil before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Freeze individual slices for up to three months.
