Description
Beat the summer heat with these delightful homemade popsicles made from fresh fruits and creamy yogurt or coconut milk.
Ingredients
- 2 cups fruit (fresh or frozen: strawberries, mangoes, or mixed berries)
- 1 cup yogurt or coconut milk
- 1/4 cup honey or maple syrup
- 1 tablespoon lemon juice
Instructions
- In a blender, combine the fruit, yogurt or coconut milk, honey or maple syrup, and lemon juice.
- Blend until the mixture is smooth and creamy.
- Pour the mixture into popsicle molds, leaving a bit of space at the top for expansion.
- Insert sticks into the molds and freeze for at least 240 minutes, or until completely solid.
- To serve, run warm water over the outside of the molds for a few seconds to help release the popsicles.
Notes
For best results, use ripe fruit for maximum flavor. You can also add banana for creaminess.
