Description

Beat the summer heat with these delightful homemade popsicles made from fresh fruits and creamy yogurt or coconut milk.


Ingredients

  • 2 cups fruit (fresh or frozen: strawberries, mangoes, or mixed berries)
  • 1 cup yogurt or coconut milk
  • 1/4 cup honey or maple syrup
  • 1 tablespoon lemon juice


Instructions

  1. In a blender, combine the fruit, yogurt or coconut milk, honey or maple syrup, and lemon juice.
  2. Blend until the mixture is smooth and creamy.
  3. Pour the mixture into popsicle molds, leaving a bit of space at the top for expansion.
  4. Insert sticks into the molds and freeze for at least 240 minutes, or until completely solid.
  5. To serve, run warm water over the outside of the molds for a few seconds to help release the popsicles.

Notes

For best results, use ripe fruit for maximum flavor. You can also add banana for creaminess.
