A flavor-packed twist on classic macaroni salad, perfect for BBQs and potlucks.
Ingredients
- 1 pound elbow macaroni
- 1 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 cup diced celery
- 1/2 cup diced red bell pepper
- 1/2 cup diced red onion
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- Optional: chopped pickles or relish
Instructions
- Cook the elbow macaroni according to package instructions. Drain and rinse it under cold water to cool it down.
- Combine mayonnaise, sour cream, Dijon mustard, and apple cider vinegar in a large mixing bowl. Stir well until smooth.
- Add the cooked elbow macaroni, diced celery, red bell pepper, red onion, and parsley to the bowl.
- Mix everything thoroughly until all ingredients are well combined.
- Season with salt and pepper to taste.
- Refrigerate for at least 30 minutes before serving to let the ingredients mingle.
Notes
For a lighter version, substitute mayonnaise with Greek yogurt.
