Description

A flavor-packed twist on classic macaroni salad, perfect for BBQs and potlucks.


Ingredients

  • 1 pound elbow macaroni
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 cup diced celery
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • Optional: chopped pickles or relish


Instructions

  1. Cook the elbow macaroni according to package instructions. Drain and rinse it under cold water to cool it down.
  2. Combine mayonnaise, sour cream, Dijon mustard, and apple cider vinegar in a large mixing bowl. Stir well until smooth.
  3. Add the cooked elbow macaroni, diced celery, red bell pepper, red onion, and parsley to the bowl.
  4. Mix everything thoroughly until all ingredients are well combined.
  5. Season with salt and pepper to taste.
  6. Refrigerate for at least 30 minutes before serving to let the ingredients mingle.

Notes

For a lighter version, substitute mayonnaise with Greek yogurt.
