Ingredients
- 1 lb lean ground beef
- 8 flour or corn tortillas
- 2 cups enchilada sauce
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Sour cream (for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, brown the ground beef along with diced onions until the onions become translucent, about 5-7 minutes.
- Add minced garlic, cumin, and chili powder, stirring for another minute until fragrant.
- Spoon a portion of the beef mixture into each tortilla, rolling them tightly and placing seam-side down in a greased baking dish.
- Pour the enchilada sauce generously over the rolled tortillas, then sprinkle with shredded cheese.
- Bake uncovered for 20-25 minutes, or until the cheese is bubbly and golden.
