A quick and flavorful meal featuring smoky shrimp, bright corn salsa, and creamy garlic sauce, perfect for customization.
Ingredients
- 1 lb large shrimp, peeled & deveined
- 1 Tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne (optional)
- 1 cup corn (thawed if frozen)
- 1/2 cup diced red onion
- 1/4 cup chopped cilantro
- 1 jalapeño, seeded & minced (optional)
- Juice of 1 lime
- Salt, to taste
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 Tbsp chopped cilantro
- 1 Tbsp lemon juice
- 1 garlic clove, minced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 avocado (sliced, cubed, or mashed)
- Sesame seeds + chopped green onion (garnish)
- Optional: 1 cup cooked rice (or quinoa)
Instructions
- Toss shrimp with olive oil, paprika, garlic powder, salt, pepper, and cayenne (if using).
- Mix corn, red onion, cilantro, jalapeño, lime juice, and salt for the corn salsa. Taste and adjust.
- Whisk together mayonnaise, sour cream, chopped cilantro, lemon juice, garlic, salt, and pepper until smooth for the sauce.
- Grill the shrimp over medium heat for 2–3 minutes per side until opaque and cooked through.
- Assemble bowls by spooning corn salsa into bowls, topping with shrimp and avocado, drizzling with sauce, and finishing with sesame seeds and green onions.
Notes
Best eaten fresh; store components separately to keep the avocado from browning.
