Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • 1 cup frozen corn, thawed
  • ½ cup red onion, diced
  • ¼ cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1 lime, juiced
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • 1 avocado, sliced, cubed, or mashed
  • Sesame seeds for garnish
  • Green onions, chopped, for garnish


Instructions

  1. Season the shrimp by combining it with olive oil, paprika, garlic powder, salt, black pepper, and cayenne in a medium bowl. Set aside.
  2. Prepare the corn salsa by mixing thawed corn, diced red onion, chopped cilantro, minced jalapeño, lime juice, and a pinch of salt in a separate bowl. Set aside.
  3. Make the creamy garlic sauce by whisking together mayonnaise, sour cream, chopped cilantro, lemon juice, minced garlic, salt, and black pepper until smooth. Set aside.
  4. Grill the shrimp on a medium heat grill for 2 to 3 minutes per side until cooked through and opaque.
  5. Assemble your bowls by layering corn salsa as a base, then topping with grilled shrimp and avocado.
  6. Drizzle creamy garlic sauce over each bowl and garnish with sesame seeds and green onions. Serve immediately.
