Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon cayenne pepper (optional)
- 1 cup frozen corn, thawed
- ½ cup red onion, diced
- ¼ cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced (optional)
- 1 lime, juiced
- ½ cup mayonnaise
- ¼ cup sour cream
- 1 tablespoon fresh cilantro, chopped
- 1 tablespoon fresh lemon juice
- 1 clove garlic, minced
- 1 avocado, sliced, cubed, or mashed
- Sesame seeds for garnish
- Green onions, chopped, for garnish
Instructions
- Season the shrimp by combining it with olive oil, paprika, garlic powder, salt, black pepper, and cayenne in a medium bowl. Set aside.
- Prepare the corn salsa by mixing thawed corn, diced red onion, chopped cilantro, minced jalapeño, lime juice, and a pinch of salt in a separate bowl. Set aside.
- Make the creamy garlic sauce by whisking together mayonnaise, sour cream, chopped cilantro, lemon juice, minced garlic, salt, and black pepper until smooth. Set aside.
- Grill the shrimp on a medium heat grill for 2 to 3 minutes per side until cooked through and opaque.
- Assemble your bowls by layering corn salsa as a base, then topping with grilled shrimp and avocado.
- Drizzle creamy garlic sauce over each bowl and garnish with sesame seeds and green onions. Serve immediately.
