Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • 1 cup frozen corn, thawed
  • ½ cup red onion, diced
  • ¼ cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1 lime, juiced
  • Salt to taste
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • 1 avocado, sliced, cubed, or mashed
  • Sesame seeds for garnish
  • Green onions, chopped, for garnish


Instructions

  1. Season the shrimp by combining them with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper. Set aside.
  2. Prepare the corn salsa by mixing thawed corn, diced red onion, chopped cilantro, minced jalapeño, lime juice, and a pinch of salt in a separate bowl. Set aside.
  3. Whisk together mayonnaise, sour cream, chopped cilantro, lemon juice, minced garlic, salt, and black pepper in a small bowl for the garlic sauce. Set aside.
  4. Grill the seasoned shrimp on medium heat for 2-3 minutes per side until cooked through.
  5. Assemble bowls with corn salsa as the base, topped with grilled shrimp and avocado.
  6. Drizzle with garlic sauce and garnish with sesame seeds and chopped green onions. Serve immediately.
