Quick and easy grilled fish tacos with fresh toppings, perfect for a weeknight dinner or gathering with friends.
Ingredients
- 1 pound white fish fillets (tilapia or cod)
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 corn tortillas
- 1 cup grilled pineapple (diced)
- 1/2 red onion (diced)
- 1/4 cup cilantro (chopped)
- 1 avocado (sliced)
- 1/2 cup sour cream or crema
- Lime wedges for serving
Instructions
- In a bowl, mix together olive oil, lime juice, garlic powder, cumin, paprika, salt, and pepper to create a marinade.
- Place the fish fillets in the marinade and let them rest for 15-30 minutes.
- Preheat your grill to medium-high heat. Grill the fish for about 3-4 minutes on each side, or until cooked through.
- While the fish is grilling, warm the corn tortillas on the grill for about 30 seconds on each side.
- Assemble your tacos by placing grilled fish on a tortilla. Top with grilled pineapple, diced red onion, cilantro, and avocado slices.
- Drizzle with sour cream or crema and serve with fresh lime wedges.
Notes
For a different twist, substitute the white fish with salmon or shrimp. Marinating for a full 30 minutes enhances the flavors.
