Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1/2 cup coconut milk
  • 1/2 cup pineapple chunks
  • 1/4 cup sweet chili sauce
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • Skewers (for grilling)


Instructions

  1. Combine the coconut milk, pineapple chunks, sweet chili sauce, lime juice, olive oil, minced garlic, salt, and pepper in a large bowl.
  2. Add the shrimp to the marinade and allow it to sit for about 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated shrimp onto the skewers.
  5. Grill the shrimp for 2-3 minutes on each side or until they’re opaque and cooked through.
  6. Serve warm, garnished with additional pineapple and lime.
