Ingredients
- 1 pound shrimp, peeled and deveined
- 1/2 cup coconut milk
- 1/2 cup pineapple chunks
- 1/4 cup sweet chili sauce
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 teaspoon garlic, minced
- Salt and pepper to taste
- Skewers (for grilling)
Instructions
- Combine the coconut milk, pineapple chunks, sweet chili sauce, lime juice, olive oil, minced garlic, salt, and pepper in a large bowl.
- Add the shrimp to the marinade and allow it to sit for about 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated shrimp onto the skewers.
- Grill the shrimp for 2-3 minutes on each side or until they’re opaque and cooked through.
- Serve warm, garnished with additional pineapple and lime.
Notes
Soak wooden skewers in water for at least 30 minutes before using to prevent burning.
