Ingredients

  • 4 boneless, skinless chicken breast halves
  • 1 Tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 large avocado (peeled, seeded, mashed)
  • 4 slices provolone cheese (or your preferred cheese)
  • 1/2 of a red onion (thinly sliced or use pickled red onion)
  • 4 leaves leafy green lettuce (washed and patted dry)
  • 4 hamburger buns


Instructions

  1. Season the Chicken: In a small bowl, mix together the chili powder, garlic powder, onion powder, cumin, oregano, black pepper, and salt. Drizzle the olive oil over the chicken breast halves and rub the spice mixture evenly on both sides. Set aside.
  2. Grill the Chicken: Preheat your grill to medium-high heat. Once hot, place the chicken onto the grill. Cook for about 3-5 minutes per side or until the internal temperature reaches 160°F. Once cooked through, transfer the chicken to a plate and cover to keep warm.
  3. Prepare the Toppings: In a bowl, mash the avocado and spritz it with a little lemon juice to prevent browning.
  4. Assemble the Sandwich: On the bottom half of each bun, place the grilled chicken. Top with a slice of provolone cheese, a generous scoop of mashed avocado, red onion, lettuce, and any additional toppings you desire. Finish with the top half of the bun, and enjoy your creation!
