Ingredients
- 2 cups shredded cooked chicken
- 8 oz cream cheese, softened
- 1 cup spicy green chilis, diced
- 1 cup enchilada sauce
- 2 cups shredded cheese (cheddar or Mexican blend)
- 8 small tortillas
- Toppings: Sour cream, cilantro, green onions, etc.
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the shredded chicken, softened cream cheese, and diced green chilis in a large bowl until well mixed.
- Spread a spoonful of enchilada sauce on the bottom of a baking dish.
- Add the chicken mixture into each tortilla, roll them up tightly, and place them seam side down in the baking dish.
- Drizzle the remaining enchilada sauce over your rolled tortillas and sprinkle generously with shredded cheese.
- Bake for 20-25 minutes, or until the cheese is bubbly and golden.
- Serve immediately with your favorite toppings.
Notes
For quicker prep, use rotisserie chicken; for lighter options, substitute low-fat cream cheese.
