Ingredients

  • 2 cups shredded cooked chicken
  • 8 oz cream cheese, softened
  • 1 cup spicy green chilis, diced
  • 1 cup enchilada sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 small tortillas
  • Toppings: Sour cream, cilantro, green onions, etc.


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, softened cream cheese, and diced green chilis in a large bowl until well mixed.
  3. Spread a spoonful of enchilada sauce on the bottom of a baking dish.
  4. Add the chicken mixture into each tortilla, roll them up tightly, and place them seam side down in the baking dish.
  5. Drizzle the remaining enchilada sauce over your rolled tortillas and sprinkle generously with shredded cheese.
  6. Bake for 20-25 minutes, or until the cheese is bubbly and golden.
