No-Bake Peanut Butter Greek Yogurt Bites

Description

A healthy, no-bake dessert that combines Greek yogurt, peanut butter, and chocolate for a protein-packed treat.


Ingredients

  • 1 cup Greek yogurt
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1/3 cup peanuts
  • 1⅓ cups chocolate chips
  • 2 teaspoons coconut oil
  • Flaky sea salt, for garnish


Instructions

  1. In a large bowl, mix Greek yogurt, peanut butter, and honey until smooth and creamy.
  2. On a parchment-lined baking sheet, scoop about 3 tablespoons of the mixture into cookie-like shapes.
  3. Press five peanuts into the top of each yogurt bite.
  4. Freeze for 2 hours until solid.
  5. In a small saucepan, melt chocolate chips and coconut oil over low heat until smooth.
  6. Dip each frozen yogurt bite into the melted chocolate and return to the parchment-lined baking sheet.
  7. Sprinkle flaky sea salt over each bite before the chocolate hardens.
  8. Freeze for another 20 minutes to set the chocolate coating.

Notes

Allow bites to sit at room temperature for 2–3 minutes for easier eating. Store in an airtight container in the freezer for up to 10 days.
