Ingredients
- 1 pound ground chicken
- ¼ cup diced red onion
- 3 garlic cloves, minced
- ¼ cup sun-dried tomatoes, finely chopped
- 1 cup (loosely packed) baby spinach, roughly chopped
- 1 tablespoon chopped fresh dill
- 2 teaspoons dried oregano
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper

- Butter lettuce, for serving
- Tzatziki sauce, for topping
- Crumbled feta cheese, for garnish
- Sliced onion, tomato, and avocado, optional
Instructions
- Mix together the ground chicken, diced red onion, minced garlic, sun-dried tomatoes, chopped spinach, dill, oregano, salt, and pepper in a medium bowl.
- Divide the mixture into four portions and shape them into patties.
- Heat olive oil in a large skillet over medium heat. Cook the patties for about 5 minutes on each side, until golden brown and fully cooked through.

Notes
For a low-carb option, serve in butter lettuce wraps. You can substitute ground turkey for chicken or try using ground lamb for a variation.
