Gooey Cinnamon Cream Cheese Muffins

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar


Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt until combined.
  3. In another bowl, mix the melted butter, milk, eggs, and vanilla extract, stirring until well blended.
  4. Gradually add the wet mixture to the dry ingredients, mixing until just combined.
  5. In a separate small bowl, beat the softened cream cheese with the powdered sugar until smooth.
  6. In yet another bowl, combine the ground cinnamon and brown sugar.
  7. Fill each muffin cup halfway with batter, add a spoonful of the cream cheese mixture, then cover with more batter. Top with a sprinkle of the cinnamon-sugar mixture.
  8. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool slightly before serving and enjoy!

Notes

Consider adding chopped apples or walnuts to the batter for extra flavor. Store muffins in an airtight container for up to 3 days or freeze for up to 3 months.
