Description
A simple and delicious dish featuring shrimp marinated in garlic, herbs, and lemon zest, topped with parmesan and roasted to perfection.
Ingredients
- 4 tablespoons extra-virgin olive oil
- 4 garlic cloves, minced
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- Zest of 1 lemon
- 2 lbs shrimp, peeled and deveined
- ½ cup grated parmesan cheese
- 2 tablespoons chopped flat Italian parsley (for garnish)
- Additional drizzle of olive oil (optional)
Instructions
- In a large bowl, combine olive oil, minced garlic, oregano, basil, salt, pepper, and lemon zest. Stir well.
- Add shrimp and toss to coat. Cover and refrigerate for 1-3 hours.
- Preheat oven to 400°F.
- Toss marinated shrimp with grated parmesan cheese.
- Spread shrimp mixture onto a baking dish in an even layer.
- Roast for about 8 minutes until shrimp are pink and opaque.
- Garnish with parsley and drizzle with olive oil if desired, then serve immediately.
Notes
For best results, use raw, frozen shrimp that are already peeled and deveined. Don’t exceed 3 hours of marination to maintain texture.
