Description

A simple and delicious dish featuring shrimp marinated in garlic, herbs, and lemon zest, topped with parmesan and roasted to perfection.


Ingredients

  • 4 tablespoons extra-virgin olive oil
  • 4 garlic cloves, minced
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • Zest of 1 lemon
  • 2 lbs shrimp, peeled and deveined
  • ½ cup grated parmesan cheese
  • 2 tablespoons chopped flat Italian parsley (for garnish)
  • Additional drizzle of olive oil (optional)


Instructions

  1. In a large bowl, combine olive oil, minced garlic, oregano, basil, salt, pepper, and lemon zest. Stir well.
  2. Add shrimp and toss to coat. Cover and refrigerate for 1-3 hours.
  3. Preheat oven to 400°F.
  4. Toss marinated shrimp with grated parmesan cheese.
  5. Spread shrimp mixture onto a baking dish in an even layer.
  6. Roast for about 8 minutes until shrimp are pink and opaque.
  7. Garnish with parsley and drizzle with olive oil if desired, then serve immediately.

Notes

For best results, use raw, frozen shrimp that are already peeled and deveined. Don’t exceed 3 hours of marination to maintain texture.
