Ingredients

  • 2 pounds potatoes, cut into - to 2-inch chunks
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt (divided)
  • 3/4 teaspoon ground black pepper (divided)
  • 1/2 teaspoon paprika
  • 2 pounds boneless, skinless chicken breasts, diced into -inch pieces
  • 1 cup creamy Parmesan garlic sauce
  • 1/2 cup water or chicken stock
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tablespoon chopped fresh parsley (for garnish)


Instructions

  1. Season the potatoes with olive oil, 3/4 teaspoon salt, 1/2 teaspoon black pepper, and paprika. Mix well and spread in an even layer in the slow cooker.
  2. Place the diced chicken breast pieces on top of the seasoned potatoes and sprinkle with the remaining salt and black pepper.
  3. In a separate bowl, whisk together the Parmesan garlic sauce and water (or chicken stock) until smooth.
  4. Pour the sauce mixture over the chicken and potatoes, covering everything.
  5. Cover the slow cooker and cook on high for 4 hours or on low for 6 hours.
  6. During the last 20 minutes, sprinkle shredded mozzarella and grated Parmesan over the top, covering again to let the cheese melt.
  7. Once melted, garnish with fresh parsley and serve hot.
