Ingredients
- 8 boneless, skinless chicken thighs
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced (or 2 teaspoons garlic powder)
- ¾ cup parmesan cheese, grated
- 1 cup plain bread crumbs
- ½ teaspoon Italian seasoning, dried
- ½ teaspoon oregano, dried
- Fresh parsley, optional for garnish
Instructions
- Preheat oven to 375°F and prepare a 9×13-inch baking dish with non-stick spray.
- In a shallow dish, combine olive oil and minced garlic; in a second dish, mix breadcrumbs, parmesan, Italian seasoning, and oregano.
- Season chicken thighs with salt and black pepper.
- Dip each thigh in the oil mixture, letting excess oil drip off.
- Dredge the oiled chicken in the breadcrumb-parmesan mixture until evenly coated.
- Arrange coated thighs in a single layer in the baking dish.
- Bake for 30 minutes, or until chicken reaches 165°F internally.
- Broil for 2 minutes to brown the cheese topping.
- Let the chicken rest for 5 minutes, garnish with parsley if desired, and serve.
Notes
For extra crispiness, mix panko breadcrumbs with regular breadcrumbs. Ensure chicken is dry before coating for better adherence.
