Ingredients

  • 8 boneless, skinless chicken thighs
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced (or 2 teaspoons garlic powder)
  • ¾ cup parmesan cheese, grated
  • 1 cup plain bread crumbs
  • ½ teaspoon Italian seasoning, dried
  • ½ teaspoon oregano, dried
  • Fresh parsley, optional for garnish


Instructions

  1. Preheat oven to 375°F and prepare a 9×13-inch baking dish with non-stick spray.
  2. In a shallow dish, combine olive oil and minced garlic; in a second dish, mix breadcrumbs, parmesan, Italian seasoning, and oregano.
  3. Season chicken thighs with salt and black pepper.
  4. Dip each thigh in the oil mixture, letting excess oil drip off.
  5. Dredge the oiled chicken in the breadcrumb-parmesan mixture until evenly coated.
  6. Arrange coated thighs in a single layer in the baking dish.
  7. Bake for 30 minutes, or until chicken reaches 165°F internally.
  8. Broil for 2 minutes to brown the cheese topping.
  9. Let the chicken rest for 5 minutes, garnish with parsley if desired, and serve.

Notes

For extra crispiness, mix panko breadcrumbs with regular breadcrumbs. Ensure chicken is dry before coating for better adherence.
