Ingredients

  • 1 pound shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 2-3 guajillo peppers, dried
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Juice of 1 lime


Instructions

  1. Rinse the guajillo peppers and soak them in warm water for about 15-20 minutes.
  2. Once softened, drain the peppers and blend them with minced garlic, cumin, and a splash of water until you have a smooth sauce.
  3. Heat olive oil in a skillet over medium heat.
  4. Add the shrimp to the skillet, cooking them for about 2-3 minutes until they begin turning pink.
  5. Pour the guajillo sauce over the shrimp, then cook for an additional 2-3 minutes until the shrimp are fully opaque and cooked through.
  6. Season with salt and pepper to taste, and finish with a squeeze of lime juice.
  7. Garnish with fresh cilantro and serve immediately.
