Ingredients
- 1 pound shrimp, peeled and deveined
- 4 cloves garlic, minced
- 2-3 guajillo peppers, dried
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
- Juice of 1 lime
Instructions
- Rinse the guajillo peppers and soak them in warm water for about 15-20 minutes.
- Once softened, drain the peppers and blend them with minced garlic, cumin, and a splash of water until you have a smooth sauce.
- Heat olive oil in a skillet over medium heat.
- Add the shrimp to the skillet, cooking them for about 2-3 minutes until they begin turning pink.
- Pour the guajillo sauce over the shrimp, then cook for an additional 2-3 minutes until the shrimp are fully opaque and cooked through.
- Season with salt and pepper to taste, and finish with a squeeze of lime juice.
- Garnish with fresh cilantro and serve immediately.
