Description

A delightful fusion of brownies and cookies, these Fudgy Chewy Browkies are gooey, chocolatey, and perfect for any occasion.


Ingredients

  • 95g plain (all-purpose) flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 225g dark chocolate (chopped)
  • 56g butter
  • 2 eggs (room temperature)
  • 100g caster sugar
  • 90g demerara sugar
  • 1 teaspoon vanilla extract
  • 85g dark or milk chocolate chips


Instructions

  1. Preheat your oven to 160ºC (320ºF) with fan or 170ºC (338ºF) for a conventional setting and line a baking tray with parchment paper.
  2. In a heatproof bowl placed over simmering water, melt the dark chocolate and butter together, stirring until smooth. Remove from heat and stir in the vanilla extract.
  3. In a separate bowl, whisk the caster sugar, demerara sugar, and eggs until light and fluffy, about 5 minutes.
  4. In another bowl, sift together the flour, cocoa powder, baking powder, and salt. Fold in the chocolate chips gently.
  5. Combine the melted chocolate mixture with the whipped eggs and sugars, stirring until just combined. Gradually fold in the dry ingredients until no dry patches remain.
  6. Drop tablespoons of batter onto the prepared tray, leaving space for spreading.
  7. Bake for 12–14 minutes, or until the tops are set. Allow to cool slightly before serving.

Notes

For best results, use room temperature eggs and handle the batter gently.
