A delightful fusion of brownies and cookies, these Fudgy Chewy Browkies are gooey, chocolatey, and perfect for any occasion.
Ingredients
- 95g plain (all-purpose) flour
- 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 225g dark chocolate (chopped)
- 56g butter
- 2 eggs (room temperature)
- 100g caster sugar
- 90g demerara sugar
- 1 teaspoon vanilla extract
- 85g dark or milk chocolate chips
Instructions
- Preheat your oven to 160ºC (320ºF) with fan or 170ºC (338ºF) for a conventional setting and line a baking tray with parchment paper.
- In a heatproof bowl placed over simmering water, melt the dark chocolate and butter together, stirring until smooth. Remove from heat and stir in the vanilla extract.
- In a separate bowl, whisk the caster sugar, demerara sugar, and eggs until light and fluffy, about 5 minutes.
- In another bowl, sift together the flour, cocoa powder, baking powder, and salt. Fold in the chocolate chips gently.
- Combine the melted chocolate mixture with the whipped eggs and sugars, stirring until just combined. Gradually fold in the dry ingredients until no dry patches remain.
- Drop tablespoons of batter onto the prepared tray, leaving space for spreading.
- Bake for 12–14 minutes, or until the tops are set. Allow to cool slightly before serving.
Notes
For best results, use room temperature eggs and handle the batter gently.
