Ingredients

  • 95 g plain (all-purpose) flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g caster or granulated sugar
  • 90 g Demerara or raw sugar
  • 1 teaspoon vanilla extract
  • 85 g dark or milk chocolate chips


Instructions

  1. Preheat the oven: Set your oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional baking. Line a baking tray with parchment paper.
  2. Melt chocolate and butter: In a heatproof bowl, combine the chopped dark chocolate and butter. Place the bowl over a simmering pot of water. Stir until melted and smooth. Remove from heat and mix in the vanilla extract.
  3. Whip eggs and sugars: In a medium bowl, beat the caster sugar, demerara sugar, and eggs together until light and fluffy—about 5 minutes.
  4. Combine dry ingredients: In another bowl, sift together flour, cocoa powder, baking powder, and salt. Stir in the chocolate chips.
  5. Integrate chocolate mixture: Gradually fold the melted chocolate mixture into the whipped egg and sugar blend.
  6. Fold in dry ingredients: Carefully fold the dry ingredients into the wet mixture until just combined.
  7. Bake the browkies: Scoop tablespoons of batter onto your baking tray, ensuring space between each scoop. Bake for 12-14 minutes, or until set with a crackly top.
  8. Cool and finish: Add a sprinkling of sea salt, if desired. Cool on the tray for 10 minutes before transferring to a cooling rack.

Notes

For a gluten-free version, consider using gluten-free flour. Dairy-free? Substitute coconut oil for butter. Add a pinch of espresso powder to enhance chocolate flavor.
