Ingredients
- 8 oz. pasta (penne or fettuccine)
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 1 cup cherry tomatoes, halved
- 1 cup broccoli florets
- Salt and pepper to taste
- Optional: Grated Parmesan cheese and fresh basil
Instructions
- Cook the Pasta: In a large pot, boil salted water and cook the pasta according to package instructions. Drain and set aside.
- Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add minced garlic, zucchini, bell pepper, and broccoli. Sauté for about 5-7 minutes or until vegetables are tender.
- Combine: Add the cooked pasta to the skillet with the vegetables. Toss everything together, seasoning with salt and pepper. If desired, sprinkle with Parmesan cheese.
