Description

Quick and delicious shrimp tacos packed with fresh flavors, perfect for a busy weeknight dinner.

Ingredients

  • 1 pound shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 8 small tortillas (corn or flour)
  • 1 cup shredded cabbage or coleslaw mix
  • ½ cup diced tomatoes
  • ½ avocado, sliced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Marinate the shrimp: In a bowl, combine the shrimp with olive oil, chili powder, cumin, salt, and pepper. Let them marinate for about 5 minutes.
  2. Cook the shrimp: Heat a skillet over medium-high heat. Add the shrimp and cook for about 3-4 minutes until they turn pink and opaque.
  3. Warm the tortillas: While the shrimp is cooking, warm the tortillas in another skillet for about 30 seconds on each side.
  4. Assemble the tacos: Place a portion of the cooked shrimp on each tortilla. Top with shredded cabbage, diced tomatoes, and avocado slices. Garnish with fresh cilantro.
  5. Serve: Squeeze lime juice over the top for an added zing. Enjoy your homemade shrimp tacos!

Notes

For best results, don’t overcook the shrimp. They cook quickly and become rubbery if left on the heat too long. Store leftovers in an airtight container for up to 2 days.
