A nostalgic and delicious pineapple upside-down cake that combines caramelized pineapple with a tender, moist cake, perfect for any occasion.
Ingredients
- 1 can pineapple slices (in juice or syrup)
- 1/4 cup butter (melted)
- 1/2 cup packed brown sugar
- Maraschino cherries (for decoration)
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup milk
- 1/3 cup vegetable oil
- 3 1/2 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1 egg
Instructions
- Preheat your oven to 350°F (175°C).
- In a round cake pan, melt the butter. Sprinkle the brown sugar evenly over the butter.
- Arrange the pineapple slices over the brown sugar and place a maraschino cherry in the center of each slice.
- In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- In another bowl, combine the milk, vegetable oil, vanilla extract, and egg, whisk until smooth.
- Gradually mix the wet ingredients into the dry ingredients until fully combined.
- Pour the batter over the arranged pineapple and cherries.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool for a few minutes before inverting it onto a serving plate.
Notes
Serve warm, optionally with vanilla ice cream or whipped cream. Properly store leftovers in an airtight container.
