Ingredients

  • 1 can pineapple slices (in juice or syrup)
  • 1/4 cup butter (melted)
  • 1/2 cup packed brown sugar
  • Maraschino cherries (for decoration)
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 3 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 egg


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a round cake pan, melt the butter. Sprinkle the brown sugar evenly over the butter.
  3. Arrange the pineapple slices over the brown sugar and place a maraschino cherry in the center of each slice.
  4. In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  5. In another bowl, combine the milk, vegetable oil, vanilla extract, and egg, whisk until smooth.
  6. Gradually mix the wet ingredients into the dry ingredients until fully combined.
  7. Pour the batter over the arranged pineapple and cherries.
  8. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool for a few minutes before inverting it onto a serving plate.

Notes
