Ingredients
- 2 cups long-grain white rice
- 4 cups chicken or vegetable broth
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup diced tomatoes (canned or fresh)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse the rice under cold water until the water runs clear.
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and cook until translucent.
- Stir in the garlic and cook until fragrant.
- Add the rice to the pot and stir for a couple of minutes to toast it lightly.
- Pour in the chicken or vegetable broth and the diced tomatoes.
- Stir in cumin, chili powder, salt, and pepper.
- Bring the mixture to a boil, then reduce heat to low and cover the pot.
- Simmer for 18-20 minutes until the rice is cooked and has absorbed the liquid.
- Fluff the rice with a fork and garnish with fresh cilantro before serving.
