A zesty marinade that infuses chicken with bold Mexican flavors, perfect for grilling or weeknight dinners.
Ingredients
- 500 g boneless chicken breast
- ½ tablespoon chili powder
- 1 teaspoon cumin
- ½ tablespoon smoked paprika
- 1 teaspoon oregano
- 1 tablespoon fresh cilantro (finely chopped)
- 2 tablespoons lime juice
- ½ teaspoon brown sugar
- 2 tablespoons olive oil
- Salt and black pepper to taste
Instructions
- Make the Marinade: In a mixing bowl, combine chili powder, cumin, smoked paprika, oregano, brown sugar, fresh cilantro, lime juice, olive oil, salt, and black pepper. Stir until all ingredients are well combined.
- Marinate the Chicken: Place the boneless chicken breast (or thighs) in a shallow dish or sealable plastic bag. Pour the marinade over the chicken; ensure it’s well coated. Cover with plastic wrap or seal the bag and refrigerate for at least 30 minutes, but up to 24 hours for deeper flavor infusion.
- Cook the Chicken: Cook the marinated chicken according to your preference. Bake, grill, air-fry, or pan-fry until the internal temperature reads 165°F (74°C) on an instant-read thermometer.
Notes
For an extra kick, add a splash of hot sauce to your marinade. Let the marinated chicken rest for a few minutes after cooking to enhance flavor.
