Ingredients

  • ¼ cup olive oil
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons chopped fresh parsley
  • 3 cloves garlic, minced
  • pounds raw jumbo shrimp (21-25 count size), thawed, peeled and deveined with tails on

Instructions

  1. Make the marinade: In a medium bowl, combine olive oil, lemon juice, salt, black pepper, parsley, and minced garlic. Whisk well.
  2. Marinate the shrimp: Add shrimp to the marinade, tossing to coat. Let marinate for 15 to 20 minutes.
  3. Prep your skewers: If using wooden skewers, soak them in water for at least 30 minutes.
  4. Thread the shrimp onto skewers: Remove shrimp from the marinade and thread onto prepared skewers.
  5. Prepare the grill: Preheat grill to medium-high, clean, and oil the grates.
  6. Grill the shrimp: Place skewers on the grill, cooking for 2 to 3 minutes on the first side.
  7. Flip and finish: Turn skewers and grill for another 2 to 3 minutes until shrimp are opaque and pink.
  8. Serve immediately: Transfer shrimp to a platter, drizzle with fresh lemon juice, and enjoy warm.

Notes

Avoid over-marinating the shrimp as the lemon juice can start cooking them. Grill lemon halves alongside for added flavor.
