This garlic grilled shrimp recipe delivers big flavor with minimal effort, perfect for casual dinners or special occasions.
Ingredients
- ¼ cup olive oil
- 2 tablespoons fresh lemon juice
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 2 tablespoons chopped fresh parsley
- 3 cloves garlic, minced
- 1½ pounds raw jumbo shrimp (21-25 count size), thawed, peeled and deveined with tails on
- Skewers (metal or wooden)
- 1 lemon, halved
Instructions
- Make the marinade: In a medium bowl, combine olive oil, lemon juice, salt, black pepper, parsley, and minced garlic. Whisk well.
- Marinate the shrimp: Add shrimp to the marinade, tossing to coat. Let marinate for 15 to 20 minutes.
- Prep your skewers: If using wooden skewers, soak them in water for at least 30 minutes.
- Thread the shrimp onto skewers: Remove shrimp from the marinade and thread onto prepared skewers.
- Prepare the grill: Preheat grill to medium-high, clean, and oil the grates.
- Grill the shrimp: Place skewers on the grill, cooking for 2 to 3 minutes on the first side.
- Flip and finish: Turn skewers and grill for another 2 to 3 minutes until shrimp are opaque and pink.
- Serve immediately: Transfer shrimp to a platter, drizzle with fresh lemon juice, and enjoy warm.
Notes
Avoid over-marinating the shrimp as the lemon juice can start cooking them. Grill lemon halves alongside for added flavor.
