Description

A creamy and cheesy slow cooker dish featuring shredded chicken, crispy bacon, and ranch seasoning, perfect for sandwiches or as a dip.


Ingredients

  • -2 pounds boneless, skinless chicken breasts (about 3-4 breasts)
  • ½ cup chicken broth (low-sodium preferred)
  • 1-ounce packet ranch seasoning mix
  • 8-ounce package cream cheese, softened and cubed
  • 1½ cups shredded sharp cheddar cheese, divided
  • ½ pound bacon, cooked and crumbled, divided
  • ½ cup sliced green onions, divided
  • Hamburger buns, slider buns, wraps, crackers, or rice for serving


Instructions

  1. Spray the inside of a 6-quart slow cooker with nonstick cooking spray.
  2. Place the chicken breasts in the slow cooker. Pour the chicken broth over the chicken and sprinkle the ranch seasoning on top.
  3. Cover and cook on high for 2-3 hours or on low for 4-5 hours.
  4. Once the chicken is cooked, shred it directly in the slow cooker using two forks without draining the liquid.
  5. Stir in the cubed cream cheese until melted and smooth.
  6. Add half of the shredded cheddar cheese, bacon, and green onions. Mix until combined.
  7. Sprinkle the remaining cheese and bacon on top and cover for 5-10 minutes until melted.
  8. Garnish with remaining green onions and serve immediately.

Notes

For a lighter option, wrap it in lettuce leaves or tortillas. Pairs well with rice, noodles, or as a dip with crackers.
