Description
A creamy and cheesy slow cooker dish featuring shredded chicken, crispy bacon, and ranch seasoning, perfect for sandwiches or as a dip.
Ingredients
- 1½-2 pounds boneless, skinless chicken breasts (about 3-4 breasts)
- ½ cup chicken broth (low-sodium preferred)
- 1-ounce packet ranch seasoning mix
- 8-ounce package cream cheese, softened and cubed
- 1½ cups shredded sharp cheddar cheese, divided
- ½ pound bacon, cooked and crumbled, divided
- ½ cup sliced green onions, divided
- Hamburger buns, slider buns, wraps, crackers, or rice for serving
Instructions
- Spray the inside of a 6-quart slow cooker with nonstick cooking spray.
- Place the chicken breasts in the slow cooker. Pour the chicken broth over the chicken and sprinkle the ranch seasoning on top.
- Cover and cook on high for 2-3 hours or on low for 4-5 hours.
- Once the chicken is cooked, shred it directly in the slow cooker using two forks without draining the liquid.
- Stir in the cubed cream cheese until melted and smooth.
- Add half of the shredded cheddar cheese, bacon, and green onions. Mix until combined.
- Sprinkle the remaining cheese and bacon on top and cover for 5-10 minutes until melted.
- Garnish with remaining green onions and serve immediately.
Notes
For a lighter option, wrap it in lettuce leaves or tortillas. Pairs well with rice, noodles, or as a dip with crackers.
