Easy Cheesy Scalloped Potatoes

Description

A rich and creamy dish made with layers of potatoes and gooey cheese, perfect for family gatherings or cozy dinners.


Ingredients

  • 2 ½ pounds russet or Yukon gold potatoes
  • 3 tablespoons butter
  • ½ onion, chopped
  • 3 cloves garlic, minced
  • 2 ½ cups heavy cream
  • 3 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 1 teaspoon fresh thyme (or dried)
  • 3 cups cheddar cheese, grated


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a large baking dish.
  2. Thinly slice the potatoes to about ⅛ to ¼ inch thick and set aside.
  3. In a medium saucepan over medium heat, melt the butter. Add the chopped onions and sauté until softened, about 3 minutes.
  4. Stir in the minced garlic and thyme, cooking until fragrant.
  5. Sprinkle in the flour and gradually whisk in the heavy cream until smooth. Season with salt and pepper, and add a pinch of cayenne for some kick, if desired.
  6. Stir in the grated cheese until melted and creamy.
  7. Layer half of the sliced potatoes in the greased dish, then pour half of the cheese sauce over them. Sprinkle on half of the remaining cheese.
  8. Repeat with the rest of the potatoes and sauce, finishing with the remaining cheese on top.
  9. Cover the dish with foil and bake for 40 minutes. Uncover and bake for an additional 20 minutes or until golden brown and bubbly.

Notes

For a twist, add sautéed mushrooms or mix in steamed broccoli for a veggie-packed version.
