Ingredients
- 2 cups broccoli, finely chopped or riced
- ½ onion, grated (red or brown)
- 1 cup panko breadcrumbs
- 1 cup grated sharp cheddar cheese
- 2 large eggs
- 1 tablespoon olive oil
- Salt and black pepper to taste
Instructions
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Steam the broccoli for 3-4 minutes until tender but not mushy.
- Grate the onion and pulse the steamed broccoli in a food processor until finely chopped.
- Add the grated onion, breadcrumbs, cheese, eggs, olive oil, salt, and pepper to the bowl with the broccoli and mix well.
- Scoop tablespoon-sized portions, roll them into balls, and place them on the prepared baking sheet.
- Bake for 20-30 minutes until golden brown and crispy.
- Let cool for 3-5 minutes before serving.
Notes
For added flavor, consider mixing in grated parmesan or fresh herbs. Adjust seasoning for toddlers accordingly.
