Description

Warm, cheesy chicken enchiladas that are simple to prepare and perfect for family gatherings or weeknight dinners.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups red enchilada sauce
  • 2 cups Mexican cheese blend
  • 1 cup tortillas
  • 1/2 cup jalapeño peppers, diced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix shredded chicken with 1 cup of enchilada sauce, diced jalapeños, cumin, garlic powder, salt, and pepper in a bowl.
  3. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  4. Fill each tortilla with the chicken mixture, then roll them up and place seam-side down in the dish.
  5. Top the enchiladas with the remaining enchilada sauce and sprinkle with the Mexican cheese blend.
  6. Bake for 20-25 minutes, until the cheese is melted and bubbly.
  7. Serve hot and enjoy!

Notes

Feel free to substitute cooked turkey for chicken, or use a different type of cheese if preferred. For extra spice, add more jalapeños or chili powder.
