Description
Warm, cheesy chicken enchiladas that are simple to prepare and perfect for family gatherings or weeknight dinners.
Ingredients
- 2 cups cooked chicken, shredded
- 2 cups red enchilada sauce
- 2 cups Mexican cheese blend
- 1 cup tortillas
- 1/2 cup jalapeño peppers, diced
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Mix shredded chicken with 1 cup of enchilada sauce, diced jalapeños, cumin, garlic powder, salt, and pepper in a bowl.
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the chicken mixture, then roll them up and place seam-side down in the dish.
- Top the enchiladas with the remaining enchilada sauce and sprinkle with the Mexican cheese blend.
- Bake for 20-25 minutes, until the cheese is melted and bubbly.
- Serve hot and enjoy!
Notes
Feel free to substitute cooked turkey for chicken, or use a different type of cheese if preferred. For extra spice, add more jalapeños or chili powder.
