Description

A quick bread that tastes like fried apple fritters without the oil, packed with chunks of fresh apples and swirled with cinnamon sugar.


Ingredients

  • 2 medium baking apples, peeled and chopped
  • ½ cup light brown sugar
  • 2 teaspoons ground cinnamon, heaping
  • 1 teaspoon ground ginger
  • 1 large egg, room temperature
  • ⅓ cup white granulated sugar
  • ¼ cup vegetable oil
  • ¼ cup full-fat sour cream, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 3 tablespoons milk


Instructions

  1. Preheat your oven to 350°F and prepare your loaf pan with nonstick spray.
  2. In a medium bowl, combine chopped apples, brown sugar, cinnamon, and ginger. Toss to coat and set aside.
  3. In a large bowl, whisk together the egg, granulated sugar, vegetable oil, sour cream, and vanilla until smooth.
  4. In another bowl, whisk together the flour, baking soda, and salt. Add to the wet mixture and mix until just combined.
  5. Fold in ¾ of the apple mixture into the batter, leaving some aside for topping.
  6. Pour batter into the loaf pan and sprinkle the reserved apple mixture on top.
  7. Bake for 50-55 minutes or until a toothpick inserted comes out clean.
  8. Let cool in the pan for at least 30 minutes, then transfer to a wire rack to cool completely.
  9. For the glaze, whisk together powdered sugar, vanilla, and milk until smooth and drizzle over the cooled bread before serving.
