A vibrant and creamy pasta salad combining the flavors of dill pickles and crispy bacon, perfect for summer picnics and gatherings.
Ingredients
- 1 cup Mayonnaise
- 1/2 cup Sour Cream
- 1/4 cup Pickle Brine
- 1 tablespoon Yellow Mustard
- 1 teaspoon Kosher Salt
- 1 teaspoon Sugar
- 8 slices Bacon
- 8 ounces Short Pasta
- 1 cup Pickles
- 1 cup Mini Cucumbers
- 1 cup Mild Cheese
- 1/2 cup Red Onions
- 1/4 cup Fresh Dill
- Salt and Pepper to taste
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the short pasta and cook until al dente, about 8-10 minutes. Drain and set aside to cool.
- Prepare the Dressing: In a large mixing bowl, combine the mayonnaise, sour cream, pickle brine, yellow mustard, kosher salt, and sugar. Whisk until smooth and well-blended.
- Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove, crumble, and let cool.
- Combine Ingredients: Once the pasta has cooled, add it to the dressing. Toss in chopped pickles, mini cucumbers, diced onions, crumbled bacon, mild cheese, and fresh dill. Mix well to combine all flavors.
- Adjust Seasoning: Taste and season with additional salt and pepper as desired.
- Chill: Cover the salad and refrigerate for at least 30 minutes to let the flavors meld.
Notes
Best enjoyed within 3-4 days. Add bacon just before serving to maintain crispiness.
