Description

A refreshing and simple Cucumber Caprese Salad combining crisp cucumbers, sweet cherry tomatoes, and creamy mozzarella, all dressed with olive oil and balsamic vinegar.


Ingredients

  • 2 large cucumbers
  • 1 cup cherry tomatoes
  • 8 oz fresh mozzarella cheese
  • 1/4 cup fresh basil leaves
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste


Instructions

  1. Slice the cucumbers into rounds and lay them on a serving platter.
  2. Halve the cherry tomatoes and add them to the platter.
  3. Cut the mozzarella into bite-sized pieces or use small mozzarella balls for convenience.
  4. Tear fresh basil leaves and scatter them over the salad.
  5. In a small bowl, whisk the olive oil, balsamic vinegar, salt, and pepper together.
  6. Drizzle the dressing over the salad and gently toss to combine.
  7. Serve immediately, or chill in the refrigerator for a refreshing treat later.
