Description
A refreshing and simple Cucumber Caprese Salad combining crisp cucumbers, sweet cherry tomatoes, and creamy mozzarella, all dressed with olive oil and balsamic vinegar.
Ingredients
- 2 large cucumbers
- 1 cup cherry tomatoes
- 8 oz fresh mozzarella cheese
- 1/4 cup fresh basil leaves
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Slice the cucumbers into rounds and lay them on a serving platter.
- Halve the cherry tomatoes and add them to the platter.
- Cut the mozzarella into bite-sized pieces or use small mozzarella balls for convenience.
- Tear fresh basil leaves and scatter them over the salad.
- In a small bowl, whisk the olive oil, balsamic vinegar, salt, and pepper together.
- Drizzle the dressing over the salad and gently toss to combine.
- Serve immediately, or chill in the refrigerator for a refreshing treat later.
Notes
Store leftovers in an airtight container in the fridge for up to 2 days. Avoid sogginess by keeping the dressing separate until ready to serve.
