Ingredients
- ½ cup low-sodium chicken broth
- 4 boneless, skinless chicken breasts (about 6-8 oz each)
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- ½ teaspoon onion powder
- ½ teaspoon dried thyme
- ½ teaspoon ground paprika
- ¼ teaspoon ground black pepper
- ¼ teaspoon garlic powder
Instructions
- Prepare the slow cooker: Pour the chicken broth into the bottom of your crockpot.
- Mix the seasonings: Combine salt, onion powder, thyme, paprika, black pepper, and garlic powder in a small bowl.
- Season the chicken: Rub each chicken breast with olive oil, then sprinkle the seasoning mixture over both sides.
- Cook: Place the seasoned chicken in the slow cooker. Cover and cook on low for 4-6 hours or on high for 3-4 hours, until the internal temperature reaches 165°F.
- Rest and serve: Let the chicken rest for 5 minutes. Slice against the grain or shred with forks.

You can easily customize the spices based on what you have available. For extra flavor, you can use butter instead of olive oil.
