Instructions
- Dry the scallops: Use paper towels to pat the scallops completely dry. Season both sides generously with salt and black pepper.
- Heat the pan: Pour olive oil into a skillet and heat over high heat until it shimmers.
- Sear the scallops: Add the scallops to the pan, ensuring not to overcrowd them. Allow them to cook undisturbed for 1-2 minutes until a golden crust forms.
- Flip and flavor: Carefully flip the scallops. Add butter and minced garlic to the pan, allowing them to infuse the oil.
- Baste: Use a spoon to baste the scallops with the melted butter for about 1-2 more minutes, or until the scallops turn opaque and are cooked through.
- Finish: Remove the scallops from heat, drizzle fresh lemon juice over them, and sprinkle with chopped parsley before serving.
Notes
For a lactose-free option, use ghee instead of butter.
