Description

This Creamy Tuscan Chicken with a luxurious cream sauce, sun-dried tomatoes, fresh spinach, and Parmesan cheese is sure to impress dinner guests while being simple to prepare.


Ingredients

  • 4 (6-ounce) boneless, skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 3 tablespoons extra virgin olive oil, divided
  • 4 garlic cloves, minced
  • ¼ cup finely chopped yellow onion
  • ½ cup sun-dried tomatoes, thinly sliced
  • 2 cups baby spinach
  • 1½ cups heavy cream, room temperature
  • ¼ cup freshly grated Parmesan cheese


Instructions

  1. Season the chicken by patting it dry and seasoning both sides with Italian seasoning, salt, and pepper.
  2. Sear the chicken in 2 tablespoons of olive oil over medium heat for 3-4 minutes per side until golden brown, then set it aside.
  3. Add the remaining tablespoon of olive oil to the skillet, then sauté the chopped onion for 2-3 minutes until softened. Add in the sun-dried tomatoes and minced garlic, cooking for another minute.
  4. Add the baby spinach to the skillet and sauté until just wilted, about 1 minute.
  5. Pour in the heavy cream and add the grated Parmesan cheese, stirring until well combined. Simmer gently until the sauce thickens.
  6. Return the seared chicken to the skillet, spoon some sauce over it, and let it cook together for about 5 minutes until heated through.
  7. Serve immediately, spooning extra sauce over the chicken.

Notes

For a dairy-free option, substitute coconut cream for heavy cream and nutritional yeast for Parmesan cheese.
