Ingredients
- 4 (6-ounce) boneless, skinless chicken breasts
- 1 teaspoon Italian seasoning
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 3 tablespoons extra virgin olive oil, divided
- 4 garlic cloves, minced
- ¼ cup finely chopped yellow onion
- ½ cup sun-dried tomatoes, thinly sliced
- 2 cups baby spinach
- 1½ cups heavy cream, room temperature
- ¼ cup freshly grated Parmesan cheese
Instructions
- Season the chicken by patting it dry and seasoning both sides with Italian seasoning, salt, and pepper.
- Sear the chicken in 2 tablespoons of olive oil over medium heat for 3-4 minutes per side until golden brown, then set it aside.
- Add the remaining tablespoon of olive oil to the skillet, then sauté the chopped onion for 2-3 minutes until softened. Add in the sun-dried tomatoes and minced garlic, cooking for another minute.
- Add the baby spinach to the skillet and sauté until just wilted, about 1 minute.
- Pour in the heavy cream and add the grated Parmesan cheese, stirring until well combined. Simmer gently until the sauce thickens.
- Return the seared chicken to the skillet, spoon some sauce over it, and let it cook together for about 5 minutes until heated through.
- Serve immediately, spooning extra sauce over the chicken.
Notes
For a dairy-free option, substitute coconut cream for heavy cream and nutritional yeast for Parmesan cheese.
