Ingredients

  • 1 lb ground beef or turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 1 packet taco seasoning
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, cilantro


Instructions

  1. Brown the ground beef or turkey in a large pot over medium heat, then drain excess fat.
  2. Add the diced onion and minced garlic, cooking until the onion turns translucent.
  3. Stir in the black beans, corn, diced tomatoes, taco seasoning, and broth; bring to a boil.
