A comforting dish featuring tender chicken simmered in a velvety cream sauce served over fluffy rice.
Ingredients
- 2 lbs chicken thighs or breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon salt, adjust to taste
- 1/2 teaspoon black pepper
- 1 teaspoon cornstarch mixed with 1 tablespoon water (optional)
- 1 1/2 cups long-grain white rice
- 3 cups water or chicken broth
Instructions
- Prepare the chicken: Season chicken with salt, pepper, garlic powder, onion powder, and paprika. Let it sit while heating the pan.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown. Transfer to a plate.
- Build the aromatic base: Reduce heat to medium, add butter, and sauté onions for 3 minutes. Add garlic and sauté for another 30 seconds.
- Create the creamy sauce: Pour in chicken broth and scrape up browned bits. Stir in heavy cream, thyme, parsley, salt, and pepper. Simmer for 5 minutes.
- If desired, whisk in cornstarch mixture to thicken for 1 minute.
- Cook the rice: Rinse rice until water runs clear. In a pot, bring water or broth to a boil, add rice, cover, and reduce heat. Cook for 15 minutes, then let it steam for 5 minutes.
- Finish the chicken: Return chicken to the pan with sauce. Cover and simmer on low for 10-15 minutes until cooked through.
- Plate and serve: Serve chicken over rice with extra sauce on top.
Notes
This dish reheats beautifully and can be meal-prepped. Store leftovers separately for better texture.
