Ingredients

  • 4 boneless skinless chicken breasts
  • 4 russet potatoes, cut into 2-inch pieces
  • 2 cups baby carrots
  • 1 packet dry ranch dressing mix
  • 1 can (10 oz) cream of chicken soup
  • 1 cup milk


Instructions

  1. In a small bowl, whisk together the cream of chicken soup, milk, and ranch dressing mix until smooth and well combined.
  2. Spray your slow cooker with non-stick cooking spray or line it with a crockpot liner.
  3. Place the chicken breasts, cubed potatoes, and baby carrots into the slow cooker.
  4. Pour the creamy ranch sauce over the ingredients.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and vegetables are tender.
  6. If desired, shred the chicken using two forks and stir it back into the sauce, or serve the breasts whole.
  7. Season with additional salt and pepper to taste before serving.

Notes

For easier cleanup, use non-stick spray or a crockpot liner. You can substitute chicken thighs or other types of potatoes if preferred.
