Ingredients
- 4 boneless skinless chicken breasts
- 4 russet potatoes, cut into 2-inch pieces
- 2 cups baby carrots
- 1 packet dry ranch dressing mix
- 1 can (10 oz) cream of chicken soup
- 1 cup milk
Instructions
- In a small bowl, whisk together the cream of chicken soup, milk, and ranch dressing mix until smooth and well combined.
- Spray your slow cooker with non-stick cooking spray or line it with a crockpot liner.
- Place the chicken breasts, cubed potatoes, and baby carrots into the slow cooker.
- Pour the creamy ranch sauce over the ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and vegetables are tender.
- If desired, shred the chicken using two forks and stir it back into the sauce, or serve the breasts whole.
- Season with additional salt and pepper to taste before serving.
Notes
For easier cleanup, use non-stick spray or a crockpot liner. You can substitute chicken thighs or other types of potatoes if preferred.
