Ingredients
- 2 cups pasta (such as rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
- Fresh herbs (optional, such as parsley or basil)
Instructions
- Cook the pasta: Boil it according to package instructions. Once cooked, drain and cool it under cold water.
- Mix the veggies: In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, and bell pepper.
- Prepare the dressing: In a small bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
- Combine: Pour the dressing over the pasta mixture and stir until everything is evenly coated.
- Chill: Refrigerate for at least 30 minutes. Serve garnished with fresh herbs if desired.
Notes
