Ingredients

  • 1 cup minute rice
  • 6 tablespoons unsalted butter
  • 4 cloves fresh garlic, minced
  • 12-16 oz extra large shrimp, peeled and deveined
  • ¼ cup shredded parmesan cheese
  • 3 tablespoons milk
  • 2 tablespoons chopped fresh parsley
  • Salt and fresh ground black pepper to taste
  • Extra parmesan cheese for garnish (optional)
  • Fresh lemon wedges for serving


Instructions

  1. Prepare minute rice according to package directions.
  2. In a large skillet, melt the unsalted butter over medium heat and add minced garlic. Cook for 2-3 minutes until fragrant and lightly golden.
  3. Add the shrimp to the skillet and cook for about 2 minutes, stirring frequently, until they turn pink and opaque.
  4. Add the prepared rice to the skillet and stir to combine.
  5. Mix in parmesan cheese, milk, parsley, salt, and pepper. Stir for 1-2 minutes until the mixture is creamy and heated through.
  6. Garnish with extra parmesan cheese and fresh parsley, then serve immediately with lemon wedges.

Notes
