Ingredients
- 1 cup minute rice
- 6 tablespoons unsalted butter
- 4 cloves fresh garlic, minced
- 12-16 oz extra large shrimp, peeled and deveined
- ¼ cup shredded parmesan cheese
- 3 tablespoons milk
- 2 tablespoons chopped fresh parsley
- Salt and fresh ground black pepper to taste
- Extra parmesan cheese for garnish (optional)
- Fresh lemon wedges for serving
Instructions
- Prepare minute rice according to package directions.
- In a large skillet, melt the unsalted butter over medium heat and add minced garlic. Cook for 2-3 minutes until fragrant and lightly golden.
- Add the shrimp to the skillet and cook for about 2 minutes, stirring frequently, until they turn pink and opaque.
- Add the prepared rice to the skillet and stir to combine.
- Mix in parmesan cheese, milk, parsley, salt, and pepper. Stir for 1-2 minutes until the mixture is creamy and heated through.
- Garnish with extra parmesan cheese and fresh parsley, then serve immediately with lemon wedges.
Notes
For a spicier version, add red pepper flakes. Use dairy-free alternatives for a dairy-free dish.
