Ingredients
- 6 large eggs
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon white vinegar
- 1/4 teaspoon salt, or to taste
- A pinch of freshly ground black pepper
- Smoked paprika for garnish
- Optional: Fresh chives or parsley, finely chopped
Instructions
- Place the eggs in a medium saucepan and cover them with cold water by about an inch.
- Bring the water to a rolling boil over medium-high heat. Remove from heat and cover for 12 minutes.
- Transfer the eggs to a bowl of ice water and let them cool for at least 5 minutes.
- Crack and peel each egg carefully.
- Slice each egg in half lengthwise and scoop the yolks into a mixing bowl.
- Mash the yolks, then mix in mayonnaise, mustard, vinegar, salt, and pepper until smooth.
- Spoon or pipe the yolk mixture back into the egg whites. Garnish with smoked paprika and chopped herbs if desired.
Notes
For a creamier texture, let the mayonnaise come to room temperature before mixing it with the yolks. You can substitute the mayonnaise for avocado for a healthier version.
