Ingredients
- 2 cups cooked chicken, shredded or diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (10 oz) diced tomatoes and green chilies
- 4 cups chicken broth
- 1 cup corn kernels
- 1 cup black beans, rinsed and drained
- 1 cup cheddar cheese, shredded
- 1 cup cream cheese
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Tortilla strips for garnish
- Fresh cilantro for garnish (optional)
Instructions
- Sauté the diced onions and minced garlic over medium heat until they become translucent.
- Stir in the shredded chicken, diced tomatoes, chicken broth, corn, black beans, cumin, chili powder, salt, and pepper.
- Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 15 minutes.
- Stir in the cream cheese and cheddar cheese until melted and creamy.
- Serve hot, garnished with tortilla strips and fresh cilantro.
Notes
For added flavor, consider roasting the garlic and onions before adding them. You can also customize the spiciness by adding diced jalapeños.
