Cream cheese chicken enchiladas are a delightful twist on a classic Mexican dish that brings comfort and joy to any dinner table.


Ingredients

  • 2 cups cooked shredded chicken
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup enchilada sauce
  • 8 tortillas
  • 1/2 cup diced onions
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, blend together the shredded chicken, cream cheese, 1/2 cup of cheddar cheese, diced onions, garlic powder, chili powder, salt, and pepper until well combined.
  3. Warm the tortillas in a dry skillet or microwave until they are soft and pliable.
  4. Spoon the chicken mixture onto each tortilla, roll them up tightly, and place them seam-side down in a greased baking dish.
  5. Pour the enchilada sauce evenly over the rolled tortillas. Sprinkle the remaining cheddar cheese generously on top.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Notes

For extra flavor, sauté the onions until translucent before adding them to the filling mixture. You can also freeze the enchiladas before baking, just add 10-15 minutes to the cooking time if baking from frozen.
