Description

An addictive slow cooker chicken dish featuring crispy bacon, creamy cheese, and tangy ranch seasoning.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 ounce packet ranch seasoning mix
  • 16 ounces cream cheese, softened
  • 8 slices bacon, cooked crispy, drained, and chopped
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sliced green onions


Instructions

  1. Set up the slow cooker and add the chicken thighs in a single layer.
  2. Sprinkle the ranch seasoning mix evenly over the chicken thighs and place the cream cheese blocks on top.
  3. Cover and cook on low for 7 hours without opening the lid.
  4. After 7 hours, use two forks to shred the chicken directly in the slow cooker.
  5. Stir in the melted cream cheese until well combined.
  6. Add the chopped bacon and sprinkle the shredded cheddar cheese over the top. Cover and let sit for 10 minutes.
  7. Sprinkle with sliced green onions and serve over rice or as desired.

Notes

For a keto option, serve it without rice. Store leftovers in an airtight container for up to 3-4 days.
