An addictive slow cooker chicken dish featuring crispy bacon, creamy cheese, and tangy ranch seasoning.
Ingredients
- 2 pounds boneless, skinless chicken thighs
- 1 ounce packet ranch seasoning mix
- 16 ounces cream cheese, softened
- 8 slices bacon, cooked crispy, drained, and chopped
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sliced green onions
Instructions
- Set up the slow cooker and add the chicken thighs in a single layer.
- Sprinkle the ranch seasoning mix evenly over the chicken thighs and place the cream cheese blocks on top.
- Cover and cook on low for 7 hours without opening the lid.
- After 7 hours, use two forks to shred the chicken directly in the slow cooker.
- Stir in the melted cream cheese until well combined.
- Add the chopped bacon and sprinkle the shredded cheddar cheese over the top. Cover and let sit for 10 minutes.
- Sprinkle with sliced green onions and serve over rice or as desired.
Notes
For a keto option, serve it without rice. Store leftovers in an airtight container for up to 3-4 days.
