Description

A creamy, bacon-loaded casserole with ranch-seasoned chicken topped with buttery Ritz crackers, perfect for weeknight dinners.

Ingredients

  • 4 cups cooked chopped chicken (rotisserie works perfectly)
  • 1 (1-oz) package ranch dressing mix
  • 1½ cups shredded cheddar cheese
  • 1 cup chopped cooked bacon
  • 1½ cups sour cream
  • 1 (10.5-oz) can unsalted cream of chicken soup
  • 1½ cups crushed Ritz crackers
  • ¼ cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F and lightly spray a 9×9-inch baking dish with cooking spray.
  2. In a large mixing bowl, combine the chopped chicken, ranch seasoning, cheddar cheese, bacon, sour cream, and cream of chicken soup. Stir until well blended.
  3. Spread the mixture into the prepared baking dish, smoothing the top with a spatula.
  4. In a small bowl, toss the crushed Ritz crackers with the melted butter until evenly coated. Sprinkle over the chicken mixture.
  5. Bake uncovered for 30 to 40 minutes until bubbly and golden brown on top.

Notes

For an extra-crispy topping, broil the casserole for the last 2-3 minutes of baking, watching carefully to prevent burning.
