A creamy, bacon-loaded casserole with ranch-seasoned chicken topped with buttery Ritz crackers, perfect for weeknight dinners.
Ingredients
- 4 cups cooked chopped chicken (rotisserie works perfectly)
- 1 (1-oz) package ranch dressing mix
- 1½ cups shredded cheddar cheese
- 1 cup chopped cooked bacon
- 1½ cups sour cream
- 1 (10.5-oz) can unsalted cream of chicken soup
- 1½ cups crushed Ritz crackers
- ¼ cup unsalted butter, melted
Instructions
- Preheat your oven to 350°F and lightly spray a 9×9-inch baking dish with cooking spray.
- In a large mixing bowl, combine the chopped chicken, ranch seasoning, cheddar cheese, bacon, sour cream, and cream of chicken soup. Stir until well blended.
- Spread the mixture into the prepared baking dish, smoothing the top with a spatula.
- In a small bowl, toss the crushed Ritz crackers with the melted butter until evenly coated. Sprinkle over the chicken mixture.
- Bake uncovered for 30 to 40 minutes until bubbly and golden brown on top.
Notes
For an extra-crispy topping, broil the casserole for the last 2-3 minutes of baking, watching carefully to prevent burning.
